Ambient Showcase Equipment Benchtop

Bench-top showcases present product on a counter behind glass, with or without temperature control depending on what is going in them.

Ambient cases suit bread, biscuits and pastry, which go stale faster in a fridge than on a counter. Heated cases hold cooked product at serving temperature. Self-service versions open to the customer for grab-and-go trade rather than requiring staff to serve.

Matching the case to the product is the whole decision — a croissant in a refrigerated case is a worse croissant by lunchtime.
