Commercial Freezers

Commercial freezers hold product at −18°C and below, and recover quickly when a door has been open all through service — which is the real difference between a commercial unit and a large domestic one.

The range covers upright storage freezers in solid and glass door, chest and display freezers, gelato and scoop cabinets, and blast chillers that pull cooked product through the danger zone fast enough to meet food safety requirements. Williams, Skope, Framec and Hoshizaki are the main brands.

Blast chilling is worth understanding even if you only cook-chill occasionally: the SKOPE MULTIFRESH NEXT M and the smaller NEXT S both chill and shock-freeze in one cabinet, which is what lets you batch-cook safely ahead of service.

Freezers run harder than fridges and are less forgiving of poor ventilation. Leave the manufacturer's clearances at the back and sides, and keep the condenser clean — most premature failures trace back to one of those two.
