A pillarless cabinet has no post between its doors. On a conventional two or three-door fridge that post divides the interior, so a full-width tray or an awkward item simply will not go in.
Removing it costs something in insulation and adds cost in engineering, which is why not every cabinet is built this way. What you get back is genuinely usable full-width shelving and a cabinet that loads in one movement rather than three.
Split-door versions divide the opening without dividing the interior, so less cold air spills when only half is opened.
