The grinder does more for espresso quality than the machine does. A grinder that cannot hold a consistent particle size makes every shot a guess, no matter what it is being pulled on.

Burr type is the main decision. Flat burrs give a very uniform grind and suit single-origin espresso where clarity matters; conical burrs run cooler and slower, which suits high-volume milk-based service. Both beat a blade grinder by a distance that is audible in the cup.

On-demand grinders dose directly into the basket, which is fresher than a doser hopper and now the default for specialty cafés.
