Six open burners is a production cooktop: enough simultaneous pots for a full à la carte section or a busy function kitchen, without moving anything off the heat to make room.
The choice between gas and electric usually comes down to the supply you have. Gas gives instant, visible control and takes any pan; electric installs more simply where there is no gas connection.
The other decision is series depth. Kore 700 suits restaurants and cafés; Kore 900 is deeper, with more usable worktop and heavier construction for kitchens running all day. Fagor supplies both.
