An electric griddle gives a large, flat, evenly heated cooking surface — for breakfast service, burgers, and anything cooked in contact with steel rather than over flame.
Plate surface is the decision. Chrome plates radiate less heat into the kitchen, release delicate product cleanly and wipe down easily; mild steel holds heat harder and suits high-volume searing. Chrome costs more and is usually worth it on a breakfast line.
Zoned plates let you run two temperatures across one surface, so bacon and eggs are not fighting over the same heat.
