A bone saw is a band saw built for meat: it cuts through bone cleanly, which a knife or cleaver cannot do without shattering it and leaving splinters through the portion.

Bench-top machines suit a butcher's counter or a restaurant breaking down smaller primals. Free-standing machines take larger carcasses and run longer without straining.

Blade length and throat depth set what fits through the machine — check both against the largest thing you will cut, not the average.
