Commercial cutlery is specified by grade and weight rather than by pattern. 18/10 stainless resists pitting from dishwasher chemicals and holds its finish through years of washing; lighter stock dulls and bends. A heavier handle also simply feels better in the hand, which is part of what a diner is paying for.

Chafing dishes hold food at temperature on a buffet using a water bath over fuel or an element — the standard for function and catering service where there is no power at the serving point.
