A mobile cabinet is storage on castors: drawers and shelves that go to the job rather than the job coming to them.

That suits any kitchen where the work moves — a prep station set up for the morning and broken down at lunch, a function kitchen, a bench that needs clearing for cleaning. A fixed cabinet cannot be moved out to clean behind; a mobile one can, which matters more than it sounds during an inspection.
