Drawers beat doors on a working bench. A drawer brings the contents out to you; a cupboard makes you bend and reach past whatever is in front. Over a shift on a prep bench that difference is real.

Drawers also organise. Knives, utensils, wraps and portioned product each get a home, which is faster to work from and far easier to keep to a cleaning schedule.

Benches with drawers on both sides suit an island position worked from two sides. Combination cabinets pair drawers with a cupboard for bulk items that do not suit a drawer.
