A salamander bench is a stainless bench built to carry a salamander grill at the right height above the work surface — close enough to brown quickly, far enough that the bench itself does not take the heat.
Height is the whole specification. A salamander mounted too low scorches the bench and cooks unevenly; too high and it will not brown at all. A purpose-built bench sets that distance correctly and supports the unit's weight on a bracket rated for it.
The bench also takes the heat load a standard workbench is not built for.
