Pot Washers Commercial
A pot washer takes what a dishwasher will not: stockpots, bratt pan inserts, mixing bowls, sheet trays and utensils too large or too soiled for a standard rack.
The difference is mechanical. A pot washer uses higher water volume and pressure over a longer cycle, in a cavity sized for bulky items, where a dishwasher is built around a rack of plates.
The case for one is labour. Scrubbing pots by hand is the slowest and least popular job in a commercial kitchen, and in a large operation it is a position someone has to fill every night.
