Auto defrost is the feature that decides how much staff time a gelato cabinet costs you. Without it, someone empties the cabinet and defrosts it by hand — an hour of labour and a temperature excursion for the product.

Automatic defrost cycles run the process on a timer, usually overnight, returning the cabinet to serving temperature before opening. On a cabinet held around −14°C for scoopability, that consistency matters: repeated manual defrosts are where gelato texture is lost.

Check where the defrost water goes. Some cabinets evaporate it, others need a drain — and that decides where the unit can be installed.
