Cake Food Display Fridges Ambient Cases

An ambient display case has no refrigeration at all. It presents product at room temperature behind glass — which is exactly right for bread, biscuits, muffins, slices and anything that goes stale or hard in a fridge.

That is the point worth making, because it is a common and expensive mistake: refrigerating baked goods dries them out. A croissant in a cake fridge is a worse croissant by lunchtime.

Ambient cases are also the cheapest cabinet in the display range to buy and to run, since there is no compressor.

Ambient means unrefrigerated. Anything requiring temperature control belongs in a refrigerated or heated case instead.
