A glass chiller holds glassware cold at the pour. Beer served into a chilled glass holds its head and its temperature noticeably longer, which is the entire argument for the cabinet.

Spring loaded is the loading system worth understanding. Glasses sit on a sprung platform that rises as they are removed, so the top glass is always at the same height — the bartender reaches without bending, hundreds of times a service. Shelf-load cabinets are cheaper and slower to work from.

Self-contained units plug in; remote versions move the compressor out from behind the bar, taking the heat and noise with it.
