A sushi display holds prepared product at chilled temperature behind curved glass, on a counter, at the point of sale.

Two things make it a specific cabinet rather than a general one. The gastronorm pan format suits sushi portions — 1/3 pans are the standard — and the humidity band keeps rice from drying and hardening, which is what ruins sushi held in an ordinary fridge.

Counter-top units suit a café or takeaway adding a sushi line; larger service bars suit a dedicated sushi counter.
