A remote cabinet has no compressor inside it. The refrigeration sits elsewhere — a plant room, a roof, an external wall — and the cabinet connects to it by pipework.
Three things follow from that, and all of them matter behind a bar. The heat goes outside instead of into the room. The noise goes with it. And the cabinet gains usable internal volume where the compressor would have been.
The trade is installation: remote units need a refrigeration mechanic, pipework and a plant location, which a self-contained cabinet does not. That cost is worth paying in a hot, tight or noise-sensitive space, and not worth paying otherwise.
