Commercial chest freezer sizing and what the litre rating hides
The short answer
A commercial chest freezer gives you the lowest cost per litre of any frozen storage and holds temperature longest in a power cut, because cold air sits in the well rather than falling out. The trade is access: without a basket system, anything below the top layer is effectively lost.
Chest freezers win on physics. Cold air is denser than warm air, so when you lift the lid the cold stays in the well rather than pouring out across the floor. That is why a chest holds temperature for 48 hours or more in a blackout while an upright is in trouble after eight.
It is also why they are cheaper to run, cheaper to buy per litre, and more reliable. Fewer moving parts, less door seal length, less work for the compressor.
The problem is everything else.
The organisation problem
A 500 litre chest with no baskets is a pit. Product goes in on Monday, more product goes on top on Wednesday, and by the following month the Monday stock is under 300mm of frozen chips and nobody has seen it since.
This is not a minor annoyance. It is a food safety failure waiting for an inspector and it is a wastage line on your P and L. Kitchens that run chest freezers badly routinely throw out 10 to 15 percent of what they freeze.
The fix is a basket system and a rule. Buy the model with the full complement of hanging baskets, and if it does not come with enough, order more. Baskets slide on rails so you can shift them sideways to reach the well beneath, which is the whole point.
The rule is simple: nothing goes in undated and unlabelled, and stock rotates through baskets front to back. Write the date in marker on the bag, not on a sticker, because stickers fall off at minus 18.
Sizing it properly
Chest freezers are quoted in gross litres, and the usable figure is lower than you expect once baskets are in. Plan on about 65 percent of gross being genuinely accessible storage.
So a 400l chest freezer gives you roughly 260 litres of practical space.
To size it: work out how many kilograms of frozen product you hold at peak, and allow roughly 4 litres per kilogram for packaged goods with air gaps. A kitchen holding 60kg of frozen stock needs around 240 usable litres, so a 400 litre gross cabinet is about right with a small margin.
Do not buy larger than you need. An under filled chest freezer costs more to run per kilogram of product than a full one, because you are cooling a lot of air. A full freezer is also more stable, since the frozen mass acts as a thermal buffer.
Solid lid or glass
Solid lids insulate better and cost less. For back of house storage, that is the right choice.
Glass sliding lids turn the cabinet into a merchandiser. In a supermarket, service station or bottle shop, a refrigerator freezer glass door chest lets customers browse, and the sales lift usually justifies the higher running cost. Look for the models with sliding rather than hinged glass, because a hinged glass lid in a customer area is a head injury waiting to happen.

Static versus fan forced
Most chest freezers are static cooled, meaning there is no fan and the evaporator coils are wrapped around the cabinet walls. Static freezing is gentler on product quality and quieter, but it means frost builds up and you need to defrost manually a few times a year.
Fan forced chest cabinets pull air across the product for faster freezing and more even temperature. They frost less but they dry product out faster if it is not sealed properly.
For most commercial applications, static is fine. If you are freezing product from fresh rather than storing already frozen goods, you want a blast chiller or a commercial blast freezer instead, not a chest.
Manual defrost is not optional
This is the maintenance item people skip.
Frost on the walls is an insulator. A 5mm layer of ice can push running cost up by 20 to 30 percent, and once it reaches 10mm the cabinet struggles to hold minus 18 at all.
Put a defrost in the calendar quarterly. Move stock into another cabinet or an esky with dry ice, unplug, leave the lid open, and let it melt into towels. Never chip at it with anything metal, because puncturing the evaporator tubing in the wall is a write off.
Check the drain plug at the base works before you start, and have a tray ready.
What to check before buying
- Climate class 4 or higher. Storerooms get hot, and a freezer rated only to 25 degrees will run continuously in an Australian back of house.
- Lid balance. A counterbalanced lid that stays up on its own. Cheap units have a lid that drops on your hands.
- Lock. Essential if the cabinet is anywhere accessible, both for stock control and for child safety on a retail floor.
- Digital thermostat with an external display. Reading the temperature without opening the lid is worth the small premium, and it makes your food safety log a ten second job.
- Castors. A loaded chest freezer weighs a lot. Without castors it never gets moved and the floor under it never gets cleaned.
- Baskets included. Confirm the count, and check they are the full depth type.
Running cost
A well insulated 400 litre commercial chest freezer draws roughly 1.5 to 2.5 kWh a day when kept full and defrosted, which is around $200 to $330 a year. That is markedly less than an upright of the same capacity, usually by 30 to 40 percent.
Over a ten year life that difference is $1,000 or more, which is why chest freezers remain the default for bulk frozen storage even in kitchens that find them annoying to use.
