Buffet Servery

A buffet servery holds food at temperature in front of the customer across a long service — the hotel breakfast, the function room, the carvery, the self-serve line.

Two approaches are stocked. Refrigerated buffet bars hold chilled product in wells. Air curtain units hold temperature with a blown air barrier instead of a lid or door, which keeps the food fully open and reachable — the format most self-serve displays use.

Air curtains are sensitive to their surroundings. A cross-draught from a doorway or an air conditioning outlet will break the curtain and the unit will not hold temperature, however it is set.
