The Fagor iKore Concept PureSteam is a boiler-type electric combi oven — steam is generated in a dedicated boiler rather than injected into the chamber, suiting kitchens with high steam volumes such as banquet cooking, vegetables, seafood and regeneration.

 

The CPW-201ERLWS is the 20-tray model. It measures 930 × 964 × 1841 mm (W × D × H) and weighs 306 kg.

• Fagor Recipe Center – 2.8" screen with rotary knob and push function for configuring and confirming inputs. Fagor Recipe Center: 100 factory-preset and culinary-tested recipes.
• Cooking modes – Low-temperature steam +30 to +98°C, steam +99°C, super steam +100 to +130°C, mixed +30 to +300°C and convection +30 to 300°C. Delta cooking and 10% regulation capacity.

• EZ-Sensor probe – Multi-point internal probe for accurate temperature monitoring. Possibility of working with one internal probe or an external probe.

• Rapid cool-down – Air and water cool-down (rapid cabinet cooling function) by an efficient air and water system.
• Triple-glazed door – Triple-glazed door ensures heat retention and safety.
