Open burners heat a pan, so you cook what is in the pan. Griddles are a flat plate — even contact heat for breakfast service, burgers and anything cooked against steel. Chargrills and radiant BBQs put the heat under bars, so fat drips, flares and marks the product; that char is the point, and a griddle cannot produce it.

Most restaurant lines run at least two of the three. Gas and electric versions of each are stocked, in bench and floor-standing formats, with stands to match.
