A mobile bench is a stainless workbench on castors, so a work surface can be set up where it is needed and moved out to clean behind — which a fixed bench cannot be.

Braked castors on at least two corners are essential. An unbraked bench moves when you lean on it, which at a prep station is both annoying and unsafe.
