Italian-made patisserie cabinets are built for a different purpose than a general display fridge. Curved or low-profile glass, fine humidity control and a finish intended to be seen — these are display furniture that happens to refrigerate.

The specification difference that matters is humidity. Patisserie work — cream, ganache, glazed fruit, laminated pastry — degrades visibly in a cabinet that runs too dry or too wet, and European cabinets are engineered around holding that band.

Serve-over counters are staff-served from the rear; self-serve models open to the customer for grab-and-go trade.
