Cake display fridge commercial buyers guide
The short answer
A commercial cake display fridge needs controlled humidity around 70 to 80 percent, not just a low temperature. Dry air is what cracks icing, dulls glazes and dries sponge, and standard refrigeration removes moisture from the air by design.
Most people shopping for a cake cabinet look at temperature range, capacity and price. Almost nobody asks about humidity, and humidity is the specification that decides whether your product still looks good at 3pm.
Refrigeration works by condensing moisture out of the air onto a cold coil. That is a feature when you are storing raw protein. It is a problem when you are displaying a mirror glaze torte, because the same process pulls moisture out of your product.
The humidity problem in practice
A standard refrigerated display cabinet with an uncontrolled evaporator will settle at around 40 to 50 percent relative humidity. At that level, exposed buttercream begins to crust within about two hours. Sponge edges dry and go pale. Mirror glazes lose their shine and start to look matte and tacky. Fondant sweats when it comes out and then dries hard.
A cabinet designed for patisserie holds 70 to 80 percent. It achieves that by running a larger evaporator at a warmer surface temperature, so it moves the same amount of heat while condensing much less moisture. Some units add active humidification on top.
When you are comparing cabinets, ask for the relative humidity figure at the stated operating temperature. If the supplier does not have it, the cabinet is almost certainly not humidity controlled.
Temperature band
Patisserie cabinets typically run 2 to 8 degrees. Most operators settle around 4 to 6.
Colder is not better here. Below about 3 degrees, chocolate work develops fat bloom, that grey dusty film on the surface, and cream based fillings firm up to the point that the texture on the plate is wrong. If you are displaying tempered chocolate pieces, you want a dedicated chocolate cabinet running warmer still, around 12 to 16 degrees with tight humidity control.
Glass and sightlines
Curved glass has been the traditional look for patisserie for decades, and it does present product well. It also costs more to replace when someone puts a tray through it, and replacement panels on obscure brands can be a six week wait.
Square or angled glass is cheaper, easier to clean, and increasingly what high end patisseries choose because the sightlines are actually better. A flat front pane at a slight rake gives a clearer view of the top shelf than a curve, which distorts.
Whichever you choose, check for double glazing and a demist system. A single glazed cake cabinet in a humid coastal cafe fogs on the customer side, and once that happens the cabinet is decoration.
Shelving and tiers
Most cake cabinets run two or three tiers plus the base deck.
Three tiers give you more display face but each shelf gets shallower and the top shelf can sit above comfortable eye line for shorter customers. Two tiers plus a deck usually merchandises better and is easier for staff to reach across.
Look for glass shelves rather than mirrored ones. Mirrored shelving looks dated and shows every crumb. Check whether shelves are height adjustable, because a fixed shelf at 180mm means you cannot display a tall layer cake.
Rotating cabinets exist and they do draw attention. They also add a motor to maintain, limit shelf loading, and make restocking slower. Most operators who buy one do not buy a second.
Lighting
This is where cake cabinets are won and lost.
You want LED strips on the front edge of each shelf, shining back and down across the product face. Top down lighting alone leaves the fronts of items on lower shelves in shadow, which is exactly the part the customer is looking at.
Colour temperature around 3000K to 3500K is right for baked goods. It brings out the warmth in pastry, caramel and chocolate. Cool white at 5000K and above makes cream look grey and pastry look raw.
Confirm the LEDs are outside the refrigerated airflow or properly sealed, because condensation inside a light channel is a permanent fog you cannot clean.
Static or fan assisted
Static cabinets cool by natural convection with no fan. Gentler on delicate product and quieter, but temperature varies more between the top and bottom shelf, sometimes by 3 or 4 degrees.
Fan assisted cabinets give even temperature throughout but move air across the product, which increases drying. For patisserie, a fan assisted cabinet without humidity control is the worst combination.
The better cake cabinets use low velocity fan assistance with a humidity controlled evaporator, which gives even temperature without the drying.
Sizing
Cabinets are usually sold by external width: 900mm, 1200mm, 1500mm, 1800mm.
Work backwards from your product. A standard 8 inch cake needs roughly 220mm of shelf width with a gap either side. A 1200mm cabinet with three tiers gives you around 15 cake positions, which suits a cafe selling 20 to 40 slices a day with a few whole cakes.
Do not over buy. A cake display fridge for sale in a larger size than you can keep full looks empty, and an empty patisserie cabinet actively suppresses sales. Better to run a smaller cabinet full than a larger one half stocked.
Cleaning and compliance
The deck and shelves need to come out without tools. Coved internal corners rather than square. A removable drip tray you can lift out and wash.
Check whether the front glass opens for customer service or only from the rear. Rear service is standard and correct for food safety, but confirm the rear doors slide rather than swing if the cabinet backs onto a narrow staff area.
Finally, ask about the condenser position. A bottom mounted condenser in a cafe pulls in dust, hair and flour, and it needs cleaning monthly. Put that in the roster or the cabinet will lose performance within a year.
