Deli display fridge selection for delis, butchers and providores
The short answer
A deli display fridge holds product between 0 and 4 degrees behind an air curtain rather than a sealed door, so air curtain design is the critical spec. Check the deck temperature at the front edge, because that is always the warmest point in the cabinet.
A serve over deli cabinet is an unusual piece of refrigeration. It has no front door, staff reach into it from behind every couple of minutes, and it sits in a shop that might be 26 degrees with the door propped open.
That it holds 2 degrees at all is a reasonable engineering achievement. Which is why the difference between a good one and a poor one is much larger than in a sealed cabinet.
How the air curtain works
The cabinet blows a sheet of cold air down from a slot at the top front, across the opening, and draws it back in through a return grille at the deck. That moving curtain of air is what separates your product from the shop.
Curtain performance depends on velocity, on the width of the discharge slot, and on how well the return grille is matched to it. Get it right and the curtain holds together across the full opening. Get it wrong, or block the return grille with a stray label, and the curtain breaks up, warm shop air rolls in, and the front of your deck sits at 8 degrees.
Three practical consequences follow.
Never load above the load line. Every cabinet has a marked maximum stack height. Product above that line sits in the air curtain and disrupts it. Staff routinely ignore this and it is the single commonest cause of a cabinet that "does not work".
Keep the return grille clear. Check it daily. A cabbage leaf across the return is enough to break the curtain.
Position away from draughts. A deli fridge display sitting opposite an entry door or under an air conditioning outlet will be fighting a cross draught all day. Air curtains are easily disrupted by external air movement.
Deck temperature is what to measure
Manufacturers quote a cabinet temperature range. What you actually care about is the temperature at the front edge of the deck, because that is always the warmest point.
When a supplier demonstrates a cabinet, put a probe at the front centre of the deck with a normal product load and leave it for an hour. If it sits above 4 degrees, walk away. For raw meat and seafood you want the front edge holding 2 degrees or lower.
Ask whether the deck is refrigerated directly or cooled only by the air curtain. A directly refrigerated deck with coils under the pan surface holds product far more reliably, and it is the spec that separates a proper display fridges for butchery cabinet from a general purpose one.
Glass angle and the customer view
Straight glass, angled glass and curved glass all appear in this category.
Angled front glass, raked out toward the customer, gives the best view of the deck and is now the most common choice. It also reduces reflection, which matters under shop lighting.
Curved glass looks traditional and suits a classic delicatessen fitout, but it distorts the view of product at the edges and costs considerably more to replace.
Whichever you choose, check whether the glass lifts or slides for cleaning access. A cabinet you have to reach the full depth of to wipe the inside of the glass will not get cleaned properly.
Static, ventilated or hybrid
Static cabinets use natural convection. Gentler on product, less drying, but less even. Good for cured meats and cheese where some surface drying is acceptable or even wanted.
Ventilated cabinets use fans for even temperature throughout. Necessary for raw meat and seafood where the whole deck must hold under 4 degrees. The drawback is drying, which is why a meat display fridge is usually specified with higher humidity than a general cabinet.
Hybrid systems run ventilated cooling with humidity control. This is the right answer for a mixed deli holding cheese, smallgoods and some fresh product in the same cabinet.
If you sell across categories, consider separate cabinets rather than compromising. Cheese wants around 8 degrees and 80 percent humidity. Raw seafood wants 0 degrees on ice. One cabinet cannot do both well.
Lighting for product
Meat and smallgoods are the hardest products to light well.
Colour rendering index is the number to ask for. A CRI above 90 shows meat as the colour it actually is. Cheap LEDs at CRI 70 make red meat look brown and grey, which costs you sales directly.
Colour temperature around 3000K to 3500K suits meat, cheese and smallgoods. Some butchers use lights with enhanced red output, which does flatter the product, though it can cross into misrepresentation if the meat looks noticeably different once wrapped.
Light the deck from the front canopy shining back, plus strips under any upper shelf. Uplighting from the deck itself looks odd and casts shadows upward.
Sizing and layout
Serve over cabinets come in modules, typically 1,000mm, 1,250mm, 1,500mm, 2,000mm and 2,500mm, and they can usually be joined into a run.
Plan on roughly 60 to 70 percent of the deck being filled with product and the rest as working space, garnish and price tickets. A cabinet packed wall to wall looks cluttered and disrupts airflow.
If you are joining modules, ask about end panels and whether the join is a full thermal break. A poorly joined run leaks cold at every junction.
The maintenance items
Condenser cleaning monthly. In a butchery with sawdust or a deli with flour in the air, more often.
Drain line checked quarterly. Serve over cabinets produce a lot of condensate and a blocked drain means water on the shop floor.
Gaskets on the rear service doors inspected every six months. They are usually the first thing to fail.
Keep the manufacturer's ambient rating in mind. Most serve over cabinets are rated to climate class 3, which is 25 degrees and 60 percent humidity. An Australian shop in February routinely exceeds that. If you are in a warm climate or an un airconditioned shop, specify class 4 and accept the higher cost, because a cabinet running permanently outside its rating will not hold temperature and the warranty will not help you.
