Is a commercial 2 door fridge the right size for your kitchen?
The short answer
A commercial 2 door fridge holds roughly 1,000 to 1,400 gross litres, which suits a kitchen doing 100 to 250 covers a day. Usable capacity is about 75 percent of the quoted gross figure, so plan on 750 to 1,050 litres of real storage.
Two door uprights are the default for a reason. They fit a standard 1,200 to 1,400mm wall run, they hold enough for a mid sized kitchen's daily stock, and they split naturally into two zones so raw and ready to eat product stay apart.
The question is whether that size actually matches your operation, or whether you are buying one because it is what everyone else has.
The capacity maths
Manufacturers quote gross litres. That number counts the air the shelves sit in and the space you cannot use because of the evaporator housing and the required air gaps.
Real usable capacity is around 75 percent of gross. So a 1,200 litre commercial 2 door refrigerator gives you about 900 litres of actual storage.
To convert that into something useful: a standard GN 1/1 pan at 100mm deep holds about 13 litres. A 900 litre usable cabinet therefore takes roughly 65 full pans if you pack it perfectly, or realistically about 45 once you account for cartons, mixed sizes and the space staff need to get a hand in.
A kitchen doing 150 covers a day typically holds 30 to 40 pans of prepped product. So a two door works, with headroom for a delivery day.
When you have outgrown it
The signal is not capacity, it is behaviour. Watch whether staff are stacking product on top of other product, or standing with the door open for more than about ten seconds hunting for something. Both mean the cabinet is over packed, and both push the internal temperature up.
At that point the options are a commercial 3 door fridge, or a second cabinet somewhere else in the kitchen. The three door gives you more capacity in a single footprint and a third zone, which is useful if you want raw, cooked and dairy properly separated. A second smaller cabinet gives you redundancy and lets you position storage where the product gets used.
For most kitchens, the second cabinet is the better answer. A single large unit failing on a Saturday takes everything with it.
Two independent circuits or one
Ask this before anything else on a two door.
Some models run a single refrigeration circuit serving both halves. Others run two independent circuits, one per door. The second arrangement costs more and it is almost always worth it, because a compressor failure leaves you with half a working cabinet instead of a full one at ambient.
Two circuits also let you run different set points. Dairy and prepped salad at 2 degrees on one side, beverages and less sensitive product at 5 on the other. Running everything at 2 degrees is wasteful, and running everything at 5 is a food safety risk for the sensitive items.
Glass or solid
For back of house storage, solid doors win. Better insulation, lower running cost, less to break.
Glass makes sense only where the cabinet faces customers or where staff genuinely need to see stock without opening. A 2 door glass door fridge in a back kitchen costs more to run and gains you nothing, since nobody is browsing it.
If you do go glass, check the glazing. Double glazed with an argon fill and a low emissivity coating is the standard worth holding out for. Single glazed cabinets sweat in Brisbane humidity and the condensation ends up on the floor, which is a slip hazard and a failed inspection.
The specs to confirm
- Climate class. Class 4 (30 degrees, 55 percent RH) is the minimum for an Australian commercial kitchen. Class 5 (40 degrees) if the cabinet sits near a hot line.
- Condenser position. Top mounted runs cooler and stays cleaner. Bottom mounted is easier to service but sucks in floor dust and needs the filter cleaned monthly.
- Internal finish. 304 stainless throughout, or at minimum 304 on the floor and shelves. Aluminium interiors pit within a few years in a salty coastal kitchen.
- Shelf rating. Ask for the kilogram rating per shelf. Anything under 40kg will bow under a full load of stock pots.
- Door closer and hold open. Self closing with a detent at 90 degrees. Without the detent, staff prop the door with a crate.
- Digital controller with a probe alarm. You want an audible alarm when the cabinet drifts, and ideally a record of the last 24 hours for your food safety log.
Power and placement
A two door upright typically draws 4 to 7 kWh per day depending on glazing and ambient. On a 10 amp circuit that is fine, but do not share the circuit with anything that cycles hard.
Placement matters more than most people allow for. Keep the cabinet away from the oven line and out of direct sun through a window. Every degree of ambient adds roughly 2 to 3 percent to running cost, so a cabinet sitting next to a commercial oven range can cost 30 percent more to run than the same unit against a cool wall.
Leave the manufacturer's stated clearance at the condenser. If the spec sheet says 100mm at the back and 50mm at the sides, that is not a suggestion, and ignoring it is the fastest route to an out of warranty compressor.
Buying used
Second hand two door cabinets come up constantly when venues close. They can be good value, but check three things: the gasket condition, the state of the condenser fins, and whether the controller holds a set point overnight. A cabinet that will not hold temperature with an empty load has a problem that costs more to fix than the unit is worth.
