A pass-through dishwasher sits between two benches with a hood that lifts. Racks are loaded on the dirty side, pushed through, and pulled out clean on the other — no bending, and no waiting beside a front-loading door.

That flow is why it suits restaurant volume. Throughput is quoted in racks per hour; size it against your peak service rather than your average.

Heat recovery models capture the steam that would otherwise fill the room and use it to preheat incoming water. In a small wash-up that is worth having for the working conditions alone, before the energy saving.
