1500mm is the size bakeries and patisseries tend to settle on: enough width for a proper range with each product given room, without the counter length an 1800mm cabinet demands.

Tiered cabinets stack product toward the eye line, which is what lifts sales on cakes and slices. Deli-format cases at the same width run colder and wetter for smallgoods and seafood — worth knowing, because the two look similar and perform very differently.
