A bench-top salad unit sits on an existing counter rather than replacing it, which makes it the cheapest way to add a chilled prep or display station to a counter that is already built.

Specify by pan format and by footprint. A countertop prep fridge holding 4 x 1/3 GN suits a sandwich station; a longer counter-top salad bar suits a self-serve line. Both need a stretch of clear, level bench that can carry the weight.

Bench-top units breathe through a vent that is easy to block with the things that accumulate on a counter. Keep the clearance the manufacturer asks for.
