A chef base is a refrigerated drawer unit built to sit under cooking equipment, putting chilled product directly beneath the grill or fryer that consumes it. Drawers beat doors on a service line: you pull out what you need without holding a door open over a hot surface.

Specify by the number of bays and drawers, and by the gastronorm format the drawers accept. Nine drawers across three bays is the common full-line configuration; two-drawer units suit shorter runs.

Chef bases are built for the heat they sit under, with the cabinet and compressor rated for it — this is the reason not to substitute an ordinary underbench fridge into the position.
