Choosing a bar fridge that survives a real venue

The short answer

A commercial bar fridge is built to hold temperature with the door opening every couple of minutes in a 32 degree room, which is the one thing a domestic unit cannot do. Size it by peak service rather than average, and expect roughly 12 to 15 stubbies per shelf metre.

Walk into any pub at 7pm on a Friday and watch the fridge doors. They open every forty seconds or so, sometimes for a full ten seconds while someone hunts for a particular can. Every one of those openings dumps the cold air out and pulls warm room air in. A domestic unit is not designed for that, and it shows within about eighteen months.

That is the entire argument for buying a proper bar fridge instead of grabbing something from an appliance retailer. The cabinet might look similar. What sits behind the panel is not.

What actually differs

The compressor is the obvious one. Commercial units are specified to hold temperature in an ambient of 32 to 43 degrees, which is the class rating you will see quoted as climate class 4 or 5. A domestic fridge is usually rated to 32 degrees at best, and most Australian bars sit warmer than that once the glasswasher and the coffee machine have been running for a few hours.

Then there is the insulation and the door seal. Commercial cabinets run thicker foam and a heavier magnetic gasket, and the better ones use a self-closing door with a stay-open detent at about 90 degrees so staff can restock without fighting it. Glass doors get double or triple glazing with a low emissivity coating, and in humid coastal venues you want heated glass or a demist element, otherwise the door fogs and nobody can see the stock.

Shelving matters more than people expect. Commercial shelves are usually adjustable on a ladder rack and rated to carry a full load of glass bottles without bowing. Domestic wire shelving sags.

Sizing it without guessing

The mistake is sizing on average consumption. You need to size on peak, and on how fast the fridge can pull warm stock back down.

A rough working number: a shelf metre holds around 12 to 15 stubbies standing up, or about 20 cans. Count what you sell in your busiest two hour block, then double it, because you want stock already cold rather than being chilled during service.

Recovery rate is the number nobody asks about. If you are loading warm cartons mid shift, ask the supplier how long the unit takes to pull a full load from 25 degrees down to 4. A good commercial unit does it in a few hours. An underspecced one never quite catches up and sits at 8 degrees all night, which is both a food safety problem and a beer quality problem.

Single, double or triple door

For a small cafe or a home bar setup, a single door display fridge is usually enough and it fits a standard 600mm cabinet run. Once you are serving more than about forty covers, or you have a dedicated drinks station, a 2 door display fridge gives you the width to separate stock by product without staff digging through shelves.

Larger venues generally want a commercial 3 door fridge on the back bar so each bartender has their own section and they are not reaching across each other. The other advantage is redundancy. Three door cabinets on some models run two independent refrigeration circuits, so a failure takes out part of the cabinet instead of all of it on a Saturday night.

If floor space is tight, look at under bench fridge drawers instead of going wider. Drawers put the stock at hand height and free the wall for glassware.

Glass or solid door

Glass wins anywhere a customer can see the cabinet. It merchandises the stock and it stops staff standing with the door open while they decide. A bar fridge with glass door also costs more to run, because glass is a worse insulator than a foamed steel panel, so expect somewhere around 15 to 25 percent higher energy use depending on glazing.

Solid doors make sense in a back of house position, a cellar, or anywhere the cabinet is purely storage. They hold temperature better and they cost less up front.

The specs worth writing down

Before you call a supplier, have these ready:

  • Internal capacity in litres, and the usable shelf metres rather than the gross volume
  • Temperature range, and whether it holds 2 to 4 degrees or only gets to 6
  • Climate class rating, ideally class 4 or better
  • Power draw in kWh per 24 hours, not just the amp rating
  • Whether the condenser is front breathing, which matters if the unit sits in a joinery run
  • Door count, door type and whether the hinge side can be swapped
  • Castors or legs, and whether it fits through your doorway

That last one catches people out constantly. Measure your narrowest doorway, then measure the cabinet with the packaging on.

Running cost over ten years

A cheap bar fridge that draws 4 kWh a day will cost you roughly $500 a year in electricity at current Queensland rates.

A well specified unit drawing 2.2 kWh a day costs about $275. Over a ten year life that gap is $2,250, which is usually more than the price difference between the two cabinets at purchase.

Work out what a cabinet costs to run

Compare two units over their working life. Defaults are a typical small business tariff and a ten year cabinet life.

If the price difference between the two cabinets is under $3,011, the more efficient one is cheaper to own.

Add the cost of a compressor failure on a Friday night, the stock you throw out, and the service call at weekend rates, and the maths gets very one sided. Buy the better cabinet.
