A free-standing fryer is sized by how much you fry in a session, not by how much oil it holds. Recovery time — how fast the oil returns to temperature after a basket goes in — is what decides whether service keeps up at peak, and it is the number worth comparing between models.
The range covers single and twin-pan gas and electric floor fryers, with and without built-in filtration. Filtration matters if you fry all day: it extends oil life, which is usually the largest running cost in this part of the kitchen.
